Singaporean Rice with Chicken

A delicious layered fusion dish made with fluffy basmati rice, chow mein style noodles, flavorful chicken, creamy dynamite chilli sauce, fried garlic, and green onions. Perfect for family dinners and dawat-style meals.

Ingredients
  

For the Chicken Marinade

  • 1 kg chicken breast cut into strips
  • 1 tbsp soy sauce
  • 1 tsp hot chilli sauce
  • 1 tsp vinegar
  • 1/2 tsp dark soy sauce
  • 2 tsp garlic powder
  • 2 tsp black pepper
  • 1 tsp MSG
  • Salt to taste
  • 1 garlic clove sliced
  • 1 tsp sliced ginger
  • 1 tbsp oil

For the Chow Mein Noodles

  • 1 spring onion head sliced
  • 1 tsp ginger garlic sliced
  • 1 carrot julienned
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 200 g boiled spaghetti
  • 1 –2 tbsp soy sauce
  • 2 tbsp chilli sauce
  • 1 tsp vinegar
  • 1 tsp MSG
  • Salt and pepper to taste

For the Dynamite Chilli Sauce

  • 1/4 cup mayonnaise
  • 1 –2 tbsp sweet chilli sauce
  • 1/4 tsp lemon juice
  • Salt and pepper to taste

For Layering and Garnish

  • 1 1/2 cups basmati rice boiled
  • 10 –12 garlic cloves sliced thin and fried
  • Green onions

Instructions
 

  • Marinate the chicken with soy sauce, chilli sauce, vinegar, dark soy sauce, garlic powder, black pepper, MSG, salt, sliced garlic, sliced ginger, and oil.
  • Heat oil in a pan, add the ginger and garlic from the marinade, then add the chicken and cook until done. Remove and set aside.
  • Wipe the same pan and add more oil.
  • Add sliced spring onion head and sliced ginger garlic. Sauté briefly.
  • Add carrot and bell peppers and cook for a few minutes.
  • Add soy sauce, chilli sauce, vinegar, MSG, salt, and pepper.
  • Add the boiled spaghetti and toss well.
  • Mix together mayonnaise, sweet chilli sauce, lemon juice, salt, and pepper to make the sauce.
  • In a serving dish, layer rice, sauce, chow mein noodles, chicken, more sauce, fried garlic, green onions, and more sauce.
  • Serve warm.
