Singaporean Rice with Chicken is one of those fun fusion dishes that always feels special on the table. It has layers of fluffy rice, flavorful chow mein style noodles, saucy chicken, a creamy dynamite sauce, and lots of crispy fried garlic and spring onions on top. It may not actually be from Singapore, but it has long been popular in Pakistan as a layered rice-and-noodle party dish.
What makes this version so delicious is the balance of textures and flavors. You get soft rice, saucy chicken, savory noodles, creamy sauce, and crispy garlic in every bite. Just like many Singaporean rice style recipes, the layered combination is what makes it so satisfying, and prepping each component first makes the whole process much easier.

Instructions
1. Marinate the Chicken
In a bowl, add the chicken strips, soy sauce, hot chilli sauce, vinegar, dark soy sauce, garlic powder, black pepper, MSG, salt, sliced garlic, sliced ginger, and oil. Mix well and let it marinate while you prepare the other components.
2. Cook the Chicken
Heat a little oil in a pan over medium-high heat. Add the sliced ginger and garlic from the marinade along with the chicken.
Cook until the chicken is done and lightly saucy, then remove it from the pan and set aside.
3. Make the Noodles
In the same pan, wipe it clean and add a little more oil.
Add the sliced spring onion head and sliced ginger garlic. Sauté briefly until fragrant. Add the carrot, yellow bell pepper, and green bell pepper. Stir fry for a few minutes so the vegetables stay slightly crisp.
Add the soy sauce, chilli sauce, vinegar, MSG, salt, and pepper. Mix well, then add the boiled spaghetti and toss until everything is evenly coated.
4. Make the Dynamite Chilli Sauce
In a small bowl, mix together the mayonnaise, sweet chilli sauce, lemon juice, salt, and pepper until smooth.
Set aside for layering.
5. Prepare the Garlic Garnish
Thinly slice the garlic and fry until golden and crispy. Set aside. Chop the green onions and keep them ready as well.
6. Layer the Singaporean Rice
Take a large serving dish or platter.
Start with a layer of boiled rice. Spoon over some of the dynamite chilli sauce. Add a layer of chow mein noodles, then the cooked chicken. Drizzle over more sauce, then top with fried garlic and green onion greens. Finish with another drizzle of sauce.
This layered format is what gives Singaporean rice its signature look and flavor, and assembling it on a platter right before serving works especially well.
7. Serve
Serve immediately while everything is fresh and warm.
It pairs perfectly with:
- Extra dynamite sauce
- More fried garlic
- Green onions
- Pickled chillies on the side
- A cold drink
Helpful Tips
- Prep all your ingredients before starting since the same sauces and aromatics are used in different parts of the dish. That makes this recipe much easier to manage.
- Boil the rice and spaghetti ahead of time if you want to speed things up.
- Do not overcook the vegetables in the noodles. A little crunch tastes best.
- Fry the garlic separately and add it at the end so it stays crisp.
- You can make the components ahead and layer just before serving, which is especially useful for guests.
