Ingredients
  

Adana Kebab

  • 500 grams ground beef with 20% fat
  • 1/2 red and green bell pepper blended, chopped, and strained
  • 1 small onion chopped and strained
  • 1 tbsp ginger garlic paste
  • 2 tbsp pul biber Aleppo pepper or red chili flakes
  • 1 tsp paprika
  • 1 tsp dried mint leaves
  • 2 tsp salt
  • 1 tsp black pepper
  • Handful of chopped coriander
  • 1 tbsp olive oil

Beef Mince

  • 500 grams ground beef
  • 2 tsp salt
  • 2 tsp black pepper
  • 2 tsp coriander powder
  • 2 tsp cumin powder
  • 2 tsp red chili powder
  • 2 tsp turmeric powder
  • 2 tsp garam masala
  • 1 tbsp ginger garlic paste
  • Handful of chopped coriander

Seekh Kebab

  • 500 grams ground beef
  • 1 small onion chopped and strained
  • 1 tbsp ginger garlic paste
  • 1 tbsp gram flour besan
  • 1 tsp crushed coriander seeds
  • 1 tsp cumin powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1-2 tsp salt
  • Handful of chopped coriander

Chicken Kofta

  • 500 grams chicken mince or mince half a kg of chicken breast in a chopper
  • 3/4 red and green bell pepper blended, chopped, and strained
  • 1 tbsp ginger garlic paste
  • 1 green chili chopped
  • 1 tbsp salt
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp red chili powder
  • 1 tsp black pepper
  • 1 tbsp gram flour besan
  • Handful of chopped coriander

Instructions
 

Adana Kebab

  • In a mixing bowl, combine all the ingredients and mix well until fully incorporated.
  • Grease a wide tray with oil and line it with parchment paper.
  • Spread the kebab mixture evenly on the tray.
  • Divide into long kebab shapes. You can keep them as long kebabs or cut them in half for smaller portions.
  • Freeze them in a single layer before transferring them to a ziplock bag.
  • When ready to cook, grill, pan-fry, or bake until golden brown.

Beef Mince

  • Mix all the ingredients thoroughly in a bowl.
  • Store in a ziplock bag and flatten for easy freezing.
  • When ready to cook, heat some oil in a pan, add the frozen beef mince, and cook until browned.
  • Stir in a few tablespoons of yogurt while cooking for a rich and tender texture.

Seekh Kebab

  • Mix all the ingredients together until fully combined.
  • Shape into long seekh kebabs.
  • Lay on a tray and freeze in a single layer before transferring to a ziplock bag.
  • When ready to cook, grill, pan-fry, or bake until golden brown.

Chicken Kofta

  • Mix all ingredients in a bowl until well combined.
  • Shape into small round koftas.
  • Freeze in a single layer before transferring to a ziplock bag.
  • When ready to cook, air-fry, bake, or shallow fry until golden brown.
