Ultimate Autumn Harvest Crunch Sandwich

As soon as the cozy season arrives, I love finding ways to incorporate sweet, crisp autumn produce into savory recipes. This Ultimate Autumn Harvest Crunch Sandwich is my absolute favorite fall creation! It layers savory turkey, chicken, and salami with two types of melted sliced cheese, an Italian salad mix, crisp apples, a drizzle of tart-sweet pomegranate molasses, flaky salt, Parmesan, and a generous layer of crunchy salt & vinegar chips!

Built on fresh 12-inch bakery loaves slathered with mayo and mustard, every single bite is a perfect balance of salty, savory, tangy, sweet, and extra crunchy. It is hands-down the best sandwich to make for a cozy fall lunch, weekend picnic, or game-day sharing board!

Why You’ll Love This Recipe
  • The Ultimate Texture & Flavor Balance: Combines savory deli meats, creamy cheeses, crisp tart apples, tangy pomegranate molasses, and crunchy chips.
  • Salt & Vinegar Chip Crunch: Adding salt & vinegar chips directly into the sandwich brings a satisfying crunch and sharp acidity that cuts through the rich meats and cheese.
  • Sweet & Tangy Apple Layer: Freshly sliced apples topped with a drizzle of pomegranate molasses, flaky salt, and Parmesan give that quintessential autumn twist.
  • Easy to Customize & Share: Uses two 12-inch bakery loaves, making it ideal for cutting into generous party portions or meal-prepping lunch for the day.
  • Accessible Cheese Pairings: Easily adapted with your favorite everyday sliced cheeses!
Ingredients
For the Bread & Spreads
  • 2 (12-inch) fresh bakery loaves (such as ciabatta, baguettes, or soft artisan sub loaves)
  • Mayonnaise, to taste
  • Mustard (whole grain or Dijon mustard works best)
For the Meats & Cheeses
  • 1 packet turkey slices
  • 1 packet salami slices
  • 1 packet chicken slices
  • Cheese slices: 4–6 slices of Milram Butterkäse (or sub mild Gouda/Havarti) and 4–6 slices of Milram Burlander (or sub sharp Cheddar/Swiss)
  • Grated Parmesan cheese, for topping
For the Apple & Salad Layer
  • 1 bag Italian salad mix (arugula, radicchio, and baby greens)
  • 2 crisp apples (such as Honeycrisp, Pink Lady, or Granny Smith), thinly sliced
  • 1–2 tbsp pomegranate molasses
  • Flaky sea salt, to taste
For the Ultimate Crunch
  • 1 bag salt & vinegar potato chips
Instructions
1. Slice and Prep the Bread

Slice your 12-inch bakery loaves in half lengthwise. Spread a generous layer of mayonnaise on the bottom half of each loaf, and spread mustard on the top half. (If desired, lightly toast the inner sides under a broiler or in a wide pan for 1 to 2 minutes until just golden before spreading!).

2. Layer the Meats & Cheeses

Layer the turkey slices, salami slices, and chicken slices evenly over the bottom loaf half. Top the meats with your cheese slices.

(If you want a warm melt, pop the open-faced bottom halves under the oven broiler for 1 to 2 minutes until the cheese turns gooey!).

3. Add Salad & Apple Slices

Heap the Italian salad mix over the cheese layer. Core and thinly slice the 2 crisp apples, then layer the fresh apple slices directly on top of the salad mix.

4. Drizzle Molasses, Salt, Parmesan & Chips

Drizzle 1 to 2 tablespoons of pomegranate molasses directly over the sliced apples. Sprinkle with a pinch of flaky sea salt and freshly grated Parmesan cheese.

Finish by adding a big, generous layer of salt & vinegar chips right on top.

5. Close, Slice, and Serve

Place the top half of the loaf over the chips and press down gently to settle all those delicious layers. Slice into individual portions and serve immediately while the chips are at their absolute crispiest!

Accessible Cheese Alternatives

In Germany, I love using Milram Butterkäse for its super creamy, buttery melt and Milram Burlander for its mild, rich flavor. If you can’t find these exact regional brands, here are the best accessible substitutes:

  • In place of Butterkäse: Use Havarti, Mild Gouda, Provolone, or Monterey Jack.
  • In place of Burlander: Use Medium Cheddar, Swiss (Emmental), or Appenzeller.
Why Pomegranate Molasses & Salt & Vinegar Chips?

The key to an incredible gourmet sandwich is balancing rich, fatty meats and cheeses with acidity and texture! Pomegranate molasses brings a thick, fruity tartness right onto the fresh apple slices, while salt & vinegar chips add a bright, zesty bite alongside that signature crunch.

Tips for Getting It Right
  • Slice Apples Thinly: Use a sharp knife or mandoline to slice the apples paper-thin so they layer neatly without sliding out when you bite into the sandwich.
  • Add Chips Last: Place the salt & vinegar chips right before closing and serving the sandwich so they stay crisp and don’t absorb excess moisture from the greens or apples.
  • Use Crusty Bakery Bread: A sturdy bakery loaf (like ciabatta or an artisan baguette) holds up to the heavy layers of meat, fruit, and chips without getting soggy.
Storage and Reheating
  • Serving Fresh: This sandwich is best enjoyed freshly assembled so the chips retain their maximum crunch!
  • Prep Ahead Tip: If prepping ahead for work or school, layer the meats, cheeses, and spreads on the bread. Keep the sliced apples, molasses, greens, and chips packed separately, and stack them onto the sandwich right before eating.
Frequently Asked Questions (FAQ)

Q. Can I swap the turkey or chicken slices for ham?

Yes! Smoked ham or roast beef pairs fantastically with the apple and pomegranate molasses flavors.

Q. What if I can’t find pomegranate molasses?

You can substitute pomegranate molasses with a splash of high-quality balsamic glaze or a drizzle of honey mixed with a drop of lemon juice!
