Welcome back to Episode 3 of my Operation: Thailand series! After sharing some of our favorite street food staples, today we are diving into one of Northern Thailand’s most famous and beloved dishes: Khao Soi. If you have ever been to Chiang Mai or dreamed of visiting, this rich, fragrant coconut curry noodle soup is the ultimate bowl of comfort.
What makes Khao Soi so unique is its incredible contrast of textures and flavors. Bone-in chicken is seared skin-side down until deep golden and crisp, then slow-simmered until fall-apart tender in a rich coconut broth infused with curry pastes, lemongrass, tamarind, and warm spices. Served over soft egg noodles and topped with a nest of crispy fried egg noodles, fresh shallots, herbs, and a squeeze of lime!
Why You’ll Love This Recipe
- Crispy Skin First: Rendering the chicken skin-side down first locks in moisture and creates a deeply flavorful base in the pan.
- Splitting the Coconut Milk: Cooking the curry pastes in a splash of coconut milk until the oil separates is the authentic secret to a glossy, aromatic curry.
- Textural Perfection: Soft egg noodles in a rich coconut soup topped with extra crispy fried egg noodles for that signature crunch.
- Bright & Customizable Garnishes: Fresh shallots, cilantro, green onions, and lime wedges cut through the rich coconut broth for a perfectly balanced bowl.
Ingredients
For the Coconut Curry Soup
- 2 tbsp vegetable oil
- 800g chicken (bone-in, skin-on cutlets or drumsticks/thighs)
- 1 tbsp ginger garlic paste
- 1 shallot, chopped
- 1 ½ tbsp Thai red curry paste (add up to 2 tbsp if you prefer extra heat!)
- 1 ½ tbsp Thai yellow curry paste
- 950ml coconut milk (divided)
- 900ml chicken stock
- 1 tbsp palm sugar (or dark brown sugar)
- 1 stem lemongrass, outer layer peeled, cut into pieces and smashed
- ½ tsp ground cumin
- ½ tsp ground turmeric
- ½ tbsp fish sauce
- 1 tbsp soy sauce
- ½ tbsp oyster sauce
- 1 tbsp tamarind paste
- 200g egg noodles (divided: most for boiling, a small portion for frying)
For the Garnishes & Serving
- Crispy fried egg noodles (a handful of raw egg noodles fried until golden)
- Fresh cilantro & green onion mix, chopped
- Sliced shallots
- Lime wedges
Instructions
1. Crisp the Chicken Skin
Heat 2 tablespoons of oil in a large Dutch oven or heavy-bottomed soup pot over medium-high heat. Add the bone-in chicken pieces skin-side down. Sear for 5 to 7 minutes until the skin turns deeply golden brown and crisp. Remove the chicken from the pan and set aside on a plate.
2. Sauté Aromatics
In the same pot (with all that flavorful chicken fat!), add the chopped shallot and ginger garlic paste. Sauté over medium heat for 1 to 2 minutes until softened and intensely fragrant.
3. Fry the Curry Pastes & Split the Coconut Milk
Add the red curry paste, yellow curry paste, and a small splash (~¼ cup) of the coconut milk to the pan. Turn the heat down to low and cook, stirring continuously, until the liquid reduces and the natural oils from the curry paste and coconut milk separate and float to the surface.
4. Simmer the Soup Base
Pour in the remaining coconut milk, chicken stock, and add the seared chicken back into the pot.
Add the palm sugar, smashed lemongrass stem, ground cumin, ground turmeric, fish sauce, soy sauce, oyster sauce, and tamarind paste. Stir well to combine.
Bring the soup to a gentle boil, then lower the heat, cover loosely with a lid, and let it simmer for 40 to 50 minutes until the chicken is tender and falling off the bone.
5. Prepare Noodles & Toppings
While the curry is simmering, prepare your noodles and garnishes:
- Crispy Noodle Topping: Heat 1 inch of oil in a small pot and fry a small handful of raw egg noodles for 1 to 2 minutes until golden and crispy. Drain on paper towels.
- Soft Egg Noodles: Boil the remaining egg noodles according to package instructions, drain, and set aside.
- Prep the chopped cilantro, green onions, sliced shallots, and lime wedges.
6. Assemble the Bowls
Divide the cooked soft egg noodles into serving bowls. Ladle the hot coconut curry broth over the noodles, placing a piece of tender bone-in chicken in each bowl.
Top generously with a nest of crispy fried egg noodles, fresh shallots, and the cilantro-green onion mix. Serve hot with fresh lime wedges on the side!
The Secret to Authentic Thai Curry: “Splitting” the Milk
In authentic Thai cooking, curry paste is never boiled raw in broth. Cooking the pastes with aromatics and a small splash of coconut milk on low heat allows the fat to break out (split). This blooms the chillies, spices, and garlic, resulting in a rich, velvety curry with a gorgeous red-gold oil floating on top!
Why the 40–50 Minute Simmer Matters
Because we are using bone-in, skin-on chicken, letting the soup simmer on low heat for 40 to 50 minutes allows the collagen and marrow from the bones to enrich the coconut broth while making the chicken tender enough to break apart with a spoon.
Tips for Getting It Right
- Don’t Move the Chicken Too Soon: When searing the chicken skin-side down, let it cook undisturbed so it releases naturally from the pan once the skin gets ultra-crispy.
- Smash the Lemongrass: Always bruise and smash your lemongrass stem with the back of a chef’s knife before dropping it into the soup so its aromatic essential oils infuse into the broth.
- Serve Immediately: Add the crispy fried egg noodle topping right before serving so it stays super crunchy against the hot soup!
Storage and Reheating
- Storage: Store leftover coconut curry soup and chicken in an airtight container in the fridge for up to 3 days. Store boiled noodles and crispy noodle toppings separately!
- Reheating: Reheat the soup on the stove over medium heat until piping hot. Re-boil fresh noodles or warm leftover noodles in hot water before pouring the hot soup over them.
Frequently Asked Questions (FAQ)
Q. What noodles are best for Khao Soi?
Chinese-style fresh yellow egg noodles (flat or round) work best! If you can’t find fresh egg noodles, dried egg noodles or ramen noodles make a great substitute.
Q. Can I use boneless chicken thighs instead?
Yes! Boneless, skinless chicken thighs can be used. If using boneless chicken, simmer for 25 to 30 minutes instead of 40 to 50 minutes.
