This recipe is my personal twist on classic morning glory muffins, but transformed into a rich, tender loaf cake and topped with a luscious walnut coffee toffee glaze! With freshly grated carrots, crisp apples, warm spices, and a hint of lemon zest, it is literally the most perfect combination for this cozy season.
I love enjoying a slice of this loaf cake warm alongside my morning coffee or afternoon tea. While the cake itself is so flavorful and moist that it stands completely on its own without any topping, the walnut coffee toffee glaze takes it to an entirely new level. It adds a nutty crunch and a rich, subtle coffee bitterness that balances out the sweetness beautifully.
Why You’ll Love This Recipe
- Cozy Autumn Flavors: Loaded with sweet carrots, grated apple, citrusy lemon zest, and warm cardamom and cinnamon.
- Complex Grain Depth: The addition of rye flour gives the loaf a denser, slightly nutty crumb structure that holds moisture exceptionally well.
- No Nuts Inside the Crumb: Perfect if you prefer a smooth, soft cake texture without nut pieces mixed into the batter.
- Irresistible Toffee Glaze: A buttery brown sugar and coffee glaze packed with toasted walnuts that adds both crunch and richness.
- Extremely Moist & Long-Lasting: Thanks to the high moisture from the carrots, apples, and yogurt, this cake stays incredibly tender for days.
Ingredients
For the Loaf Cake
- 65g white granulated sugar
- 65g packed brown sugar
- Zest of 1 lemon
- 1 tsp cardamom powder (use 1/2 tsp if you prefer a milder cardamom flavor)
- 3 large eggs
- 1 tsp vanilla extract
- 150g vegetable oil
- 1 tbsp full-fat Greek yogurt
- 150g all-purpose flour
- 50g rye flour (or substitute with 50g all-purpose flour—see notes)
- 1 ½ tsp baking soda
- 1 tsp salt
- 1 ½ tsp ground cinnamon
- 220g grated carrots
- 120g grated apples
For the Walnut Coffee Toffee Glaze
- 100g unsalted butter
- 160g packed brown sugar
- 150ml heavy cream
- 1 cup chopped walnuts
- 3 tsp instant coffee mixed in 1 tbsp water
- Pinch of salt
Instructions
1. Prepare the Pan & Rub the Zest
Preheat your oven to 170°C (340°F). Grease and line a standard loaf pan with parchment paper, leaving an overhang on the sides for easy removal later.
In a large mixing bowl, combine the white granulated sugar, packed brown sugar, lemon zest, and ground cardamom. Rub the sugar, zest, and spices together between your fingertips for 1 to 2 minutes until the sugar feels like wet sand and is intensely fragrant. This releases the natural oils from the lemon zest and infuses the spices directly into the sugar.
2. Mix the Wet Ingredients
Add the eggs, vanilla extract, vegetable oil, and full-fat Greek yogurt to the spiced sugar mixture. Whisk vigorously until the batter becomes smooth, slightly pale, and well combined.
3. Fold in the Dry Ingredients & Produce
In a separate bowl, whisk together the all-purpose flour, rye flour, baking soda, salt, and ground cinnamon.
Gently fold the dry ingredients into the wet batter using a spatula just until combined, taking care not to overmix. Fold in the grated carrots and grated apples until evenly distributed throughout the batter.
4. Bake the Loaf
Pour the batter into your prepared loaf pan and smooth out the top with your spatula.
Bake at 170°C for 70 to 80 minutes. Because of the high moisture content from the fruit and vegetables, this cake requires a longer bake time than typical loaf cakes. Do not worry about it drying out during the long bake, the high moisture level keeps it soft and tender all the way through! To check if it is done, insert a wooden skewer into the center; it should come out clean or with a few moist crumbs.
Remove from the oven and allow the loaf to cool in the pan for 15 to 20 minutes before lifting it out onto a wire rack to cool completely.
5. Make the Walnut Coffee Toffee Glaze
While the cake cools, make the glaze. In a small saucepan over medium heat, melt the unsalted butter and brown sugar together, stirring until the sugar dissolves and the mixture begins to bubble gently.
Pour in the heavy cream, dissolved instant coffee, and a pinch of salt. Whisk continuously and bring to a gentle simmer for 2 to 3 minutes until thickened and smooth. Remove from heat and stir in the chopped walnuts. Allow the glaze to cool slightly so it thickens enough to pour over the cake.
6. Glaze & Serve
Spoon the warm walnut coffee toffee glaze generously over the top of the cooled loaf cake, allowing it to drip down the sides. Slice and serve!
Why Rye Flour Makes a Difference
I love using rye flour in this recipe alongside all-purpose flour because it introduces a deeper, earthier flavor profile and gives the cake a slightly denser, more substantial crumb structure. It complements the warm cardamom and cinnamon spices beautifully without making the cake feel heavy. If you don’t have rye flour on hand, you can easily swap it for an equal amount of all-purpose flour (using 200g all-purpose flour in total).
The Power of Coffee in the Toffee Glaze
Do not skip adding the coffee to the toffee glaze! Because both the morning glory loaf and the brown sugar toffee base are rich and sweet, the instant coffee provides an essential hint of bitterness. It balances out the sweetness of the caramel, cuts through the heavy cream, and pairs effortlessly with the warm toasted walnuts on top.

I got the inspiration for this delicious loaf variation from Isabelle Heikens on Instagram! Transforming classic morning glory muffin flavors into a slow-baked loaf cake makes it such a comforting centerpiece for cozy autumn baking.
Tips for Getting It Right
- Don’t Rush the Bake Time: Because of the natural moisture from the grated carrots, apples, and yogurt, this cake needs a full 70 to 80 minutes in the oven. Trust the process, the cake will remain soft and moist!
- Grate Fresh Produce: Shred your carrots and apples fresh using a box grater right before baking for the best flavor and moisture retention.
- Adjust Spices to Taste: The 1 tsp of cardamom gives a lovely, pronounced warmth to the cake. If you prefer a milder cardamom note, reduce it to ½ tsp.
- Customization Notice: I personally prefer a smooth cake crumb without nuts folded in, using nuts only as a topping in the glaze. However, if you enjoy crunchy textures inside your cake, feel free to fold ½ cup of chopped walnuts or pecans directly into the batter along with the carrots and apples!
Storage and Reheating
- Storage: Store the loaf cake in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 5 days.
- Serving Warm: Slice the cake and warm it in the microwave for 10–15 seconds to soften the toffee glaze and re-awaken the spices before enjoying.
Frequently Asked Questions (FAQ)
Q. Can I use all-purpose flour entirely instead of rye flour?
Yes! If you don’t have rye flour, simply replace it with 50g of all-purpose flour, making the total all-purpose flour weight 200g.
Q. Can I bake this recipe as muffins instead of a loaf cake?
Yes. Divide the batter into a 12-cup lined muffin tin and bake at 180°C for 20 to 25 minutes until a toothpick inserted in the center comes out clean.
Q. Can I make the glaze without coffee?
You can omit the coffee if you prefer a classic brown sugar toffee glaze, but keep in mind the glaze will taste significantly sweeter without the coffee to balance it out.
