Turkish Cheese Rolls (Sigara Böreği)

Golden, crispy, and filled with a delicious blend of cheeses and spices, these Turkish Cheese Rolls—also known as Sigara Böreği—are the perfect addition to your Ramadan table.

Ingredients
  

For the Filling:

  • 250 g feta cheese crumbled
  • 100 g shredded mozzarella cheese
  • 1 tsp pul biber or red chili flakes
  • 1 tsp black pepper
  • 1 tsp sumac optional, adds a tangy flavor
  • 1 egg
  • Handful of chopped dill You can also use coriander or parsley for a different twist!

For the Rolls:

  • Yufka pastry sheets or phyllo dough, cut into triangles if unavailable
  • Olive oil for brushing
  • 1 egg for egg wash
  • White and black sesame seeds for topping

Instructions
 

  • In a bowl, combine crumbled feta, shredded mozzarella, pul biber, black pepper, and sumac.
  • Add one beaten egg and chopped dill, then mix everything until well combined. The filling should be slightly creamy but still hold its shape.
  • Lay a yufka sheet flat on a clean surface. If using large yufka, cut it into triangles (like pizza slices).
  • Place a spoonful of the cheese filling near the wide edge of the triangle.
  • Fold in the sides and roll tightly like a spring roll, sealing the tip with a little egg wash or water.
  • Preheat air fryer to 190°C (375°F).
  • Arrange the cheese rolls in a single layer in the air fryer basket.
  • Brush each roll with egg wash and sprinkle with white and black sesame seeds.
  • Air-fry for 7-8 minutes, then carefully flip each roll.
  • Brush with olive oil for extra crispiness and continue air-frying for another 7-8 minutes, until golden brown and crunchy.

Notes

This recipe makes around 12 rolls, and they can be air-fried, baked, or deep-fried for that perfect crispy texture.
