Ingredients
For the Filling:
250
g
feta cheese
crumbled
100
g
shredded mozzarella cheese

tsp
pul biber
or red chili flakes

tsp
black pepper
1
tsp
sumac
optional, adds a tangy flavor

egg
Handful of chopped dill
You can also use coriander or parsley for a different twist!
For the Rolls:
Yufka pastry sheets
or phyllo dough, cut into triangles if unavailable
Olive oil for brushing

for egg wash
White and black sesame seeds
for topping
Instructions
In a bowl, combine crumbled feta, shredded mozzarella, pul biber, black pepper, and sumac.
Add one beaten egg and chopped dill, then mix everything until well combined. The filling should be slightly creamy but still hold its shape.
Lay a yufka sheet flat on a clean surface. If using large yufka, cut it into triangles (like pizza slices).
Place a spoonful of the cheese filling near the wide edge of the triangle.
Fold in the sides and roll tightly like a spring roll, sealing the tip with a little egg wash or water.
Preheat air fryer to 190°C (375°F).
Arrange the cheese rolls in a single layer in the air fryer basket.
Brush each roll with egg wash and sprinkle with white and black sesame seeds.
Air-fry for 7-8 minutes, then carefully flip each roll.
Brush with olive oil for extra crispiness and continue air-frying for another 7-8 minutes, until golden brown and crunchy.
Notes
This recipe makes around 12 rolls, and they can be air-fried, baked, or deep-fried for that perfect crispy texture.
