Pepperoni Puff Pastry Pizza

- 1 puff pastry sheet thawed if frozen
- ¼ cup pizza sauce
- ½ cup shredded mozzarella cheese
- 8 slices pepperoni
- 1 egg for egg wash
Preheat oven to 200°C (fan 190°C).
Line a baking tray with parchment paper.
Cut the puff pastry sheet into 8 equal squares.
Place them slightly spaced apart on the baking tray.
Using a fork, gently prick the center of each square (avoid the edges). This prevents the middle from puffing too much.
Spoon a small amount of pizza sauce into the center of each square.
Spread lightly but keep the edges clean.
Add shredded mozzarella on top of the sauce.
Place one slice of pepperoni on each square.
Beat the egg.
Brush egg wash around the edges of each pastry square.
This will give the crust a golden, glossy finish.
Bake for 15–18 minutes, or until the pastry is puffed and golden and the cheese is melted.
Let cool slightly before serving.
