One Pot Lazy Lasagna

All the flavor of a proper lasagna made entirely in one pan. Beef mince in a rich tomato cream sauce with lasagna sheets cooked directly in the sauce and topped with melted cheddar and mozzarella.

Ingredients
  

For the Lasagna

  • 2 tbsp olive oil
  • 1 onion finely diced
  • 2 to 3 garlic cloves chopped
  • 500 g beef mince
  • 1 carrot finely diced
  • 1 1/2 tbsp tomato paste
  • 250 ml tomato sauce
  • 200 ml chicken or vegetable broth
  • 3 tsp paprika
  • 2 tsp garlic powder
  • 2 tsp black pepper
  • 2 tsp oregano
  • 1 to 2 tsp salt
  • 150 to 200 ml cooking cream or ricotta

For the Top

  • 250 g lasagna sheets broken into rough pieces
  • 1 bowl shredded cheddar cheese
  • 1 bowl shredded mozzarella cheese
  • Parmesan optional
  • Fresh basil optional

Instructions
 

  • Heat olive oil in a large wide pan over medium heat. Add the onion and garlic and sauté until softened and fragrant.
  • Add the beef mince and diced carrot. Break the mince up as it cooks and cook until slightly browned and all the water has dried up completely.
  • Add the tomato paste and stir through for a minute. Pour in the tomato sauce and add all the spices. Mix well. Pour in the broth, stir to combine, and cook for 10 minutes until the sauce reduces slightly and the flavors come together.
  • Pour in the cooking cream or ricotta and stir through. Cook for a few more minutes until the sauce is rich and slightly thickened but still loose and saucy.
  • Break the lasagna sheets into rough pieces and press them down into the sauce until submerged. Cover the pan and cook on low heat for 15 to 20 minutes until the sheets are cooked through and have absorbed the sauce. Add a splash of broth or water if the pan looks too dry halfway through.
  • Scatter the cheddar and mozzarella over the top. Cover and let the cheese melt over low heat. If the pan is oven safe, place under the grill for a few minutes for a golden bubbling top.
  • Finish with fresh basil and Parmesan if using. Serve straight from the pan.
