Ingredients
  

For the Dynamite Sauce:

  • 4 tbsp mayonnaise
  • 2 tbsp tomato ketchup
  • 1 tbsp sriracha
  • 1 tbsp lemon juice
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp salt

For the Chicken:

  • 400 g chicken breast cut into bite-sized cubes
  • 1 tsp salt
  • 1 tsp white pepper
  • 1 tsp garlic powder
  • 1 tbsp soy sauce
  • 1 egg
  • 3 tbsp flour
  • Oil for frying

For Serving:

  • 1 plate frozen potato chips fried or air-fried
  • Chopped spring onions for garnish

Instructions
 

  • In a small bowl, whisk together mayonnaise, ketchup, sriracha, lemon juice, black pepper, paprika, and salt until smooth. Set aside.
  • In a mixing bowl, combine chicken cubes, salt, white pepper, garlic powder, and soy sauce. Mix well and let it marinate for 10-15 minutes.
  • Add egg to the marinated chicken and mix thoroughly.
  • Coat the chicken pieces evenly with flour, shaking off any excess.
  • Heat oil in a pan over medium-high heat.
  • Fry the chicken pieces in batches until golden brown and crispy, about 4-5 minutes per batch.
  • Remove and drain on a paper towel.
  • In a large bowl, toss the crispy chicken with the prepared dynamite sauce, ensuring each piece is well coated.
  • Add the fried or air-fried potato chips and toss gently to combine.
  • Garnish with chopped spring onions for a fresh crunch.
