For the Potato Mixture
- 1 kg potatoes peeled, cubed, and boiled
- 1 shallot chopped
- 2 –3 tbsp chopped green onions
- 3 tbsp chopped coriander
- 1 –2 tsp salt or to taste
- 2 tsp coriander powder
- 2 tsp cumin powder
- 1 tsp red chilli powder
- 1 tsp chicken powder
- 2 tsp black pepper
- 2 tsp red chilli flakes
- 1 tsp chaat masala
For the Coating
- 1/2 cup flour
- 2 eggs
- 1 cup panko crumbs
- Oil for frying
Boil the potatoes until tender, drain well, and mash until smooth.
Add the shallot, green onions, coriander, salt, coriander powder, cumin powder, red chilli powder, chicken powder, black pepper, red chilli flakes, and chaat masala. Mix well.
Shape into cutlets.
Coat each cutlet in flour, then egg, then panko crumbs.
Heat oil in a pan and fry in batches until golden and crispy on both sides.
Serve hot with ketchup or chutney.
