In a bowl, whisk soy sauce, chilli sauce, oyster sauce, rice vinegar, sesame oil, honey, lemon zest, lemon juice, chicken broth, and 1 tsp cornstarch for the sauce.
Fry marinated chicken in hot oil in batches for 4-5 minutes until golden brown and crispy. Drain on paper towels.
In a pan over high heat, add 2 tbsp oil and sauté ginger garlic paste for 30 seconds.
Whisk and pour in the sauce mixture. Cook for 1-2 minutes until thick and glossy.
Add fried chicken and toss rapidly for 1 minute until completely coated in glaze.
Garnish with sliced spring onion greens and serve hot with rice.
Notes
- Fresh Zest & Juice: Using both lemon zest and fresh lemon juice provides bright citrus aroma and balanced tartness against the honey.- Batter Technique: Combining plain flour, cornflour, and egg gives the chicken a light coating that holds its crunch under sauce.
