  • 150 g brown sugar
  • 50 g white sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 180 g shredded carrots about 3 medium carrots
  • 60 g Greek yogurt or applesauce
  • 100 g dark chocolate chips for topping

Dry Ingredients

  • 190 g all-purpose flour
  • 1 tsp baking powder
  • ¾ tsp baking soda
  • ¼ tsp salt
  • 2 tsp cinnamon

Instructions
 

  • Preheat your oven to 180°C (350°F).
  • Grease and line an 8.5-inch loaf pan with parchment paper.
  • In a large bowl, whisk together oil, brown sugar, and white sugar until smooth.
  • Add eggs and vanilla, whisking well until slightly thickened.
  • Mix in shredded carrots and Greek yogurt (or applesauce).
  • In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  • Add dry ingredients to the wet mixture and fold gently until just combined, do not overmix.
  • Pour the batter into the prepared loaf pan.
  • Sprinkle dark chocolate chips evenly over the top.
  • Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  • Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
