Cheesy Garlic Potato Rolls

Soft, pillowy bread rolls filled with a creamy garlic potato mash and melted mozzarella cheese, finished with a generous brush of rich garlic herb Parmesan butter.

Ingredients
  

For the Dough

  • 350 g bread flour gives a lovely chewy, soft structure
  • 10 g granulated sugar
  • 7 g salt
  • 6 g instant dry yeast
  • 180 g warm milk
  • 1 egg
  • 60 g unsalted butter softened

For the Garlic Herb Butter

  • 40 g unsalted butter or salted butter
  • 20 g garlic butter
  • 20 g herb butter or substitute with 80g butter + fresh roasted garlic & herbs—see notes
  • ¼ cup shredded Parmesan cheese
  • Pinch of salt if using unsalted butter

For the Creamy Potato Filling

  • 4 –5 medium potatoes boiled and peeled
  • ¼ cup mayonnaise
  • 2 tbsp cream
  • 2 tsp paprika
  • 2 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp softened butter

For Layering

  • Garlic herb butter
  • Creamy potato filling
  • 200 g shredded mozzarella cheese

Instructions
 

  • Whisk together bread flour, sugar, salt, and instant dry yeast in a mixing bowl.
  • Add warm milk and egg. Begin kneading, then gradually incorporate the 60g softened butter. Knead for 8-10 minutes until smooth and elastic.
  • Place dough in a greased bowl, cover, and let rise in a warm spot for 1 to 1.5 hours until doubled in size.
  • Mash the warm boiled potatoes with mayonnaise, cream, paprika, garlic powder, black pepper, salt, and 1 tbsp softened butter until silky smooth.
  • In a small bowl, mix the butter, garlic butter, herb butter, Parmesan cheese, and salt into a soft, spreadable paste.
  • Roll risen dough into a large rectangle. Spread with garlic herb butter, then the creamy potato filling, and top evenly with shredded mozzarella.
  • Roll tightly into a log and slice into 9-12 equal rolls. Arrange in a greased baking dish, cover, and let rise for 30-40 minutes until puffy.
  • Preheat oven to 180°C (350°F) and bake for 25-30 minutes until golden brown.
  • Brush generously with warm garlic herb butter immediately after removing from the oven. Serve warm.

Notes

Garlic Herb Butter Substitution: If you do not have pre-made garlic and herb butter available, use 80g of unsalted or salted butter overall and mix in 2-3 cloves of finely minced or roasted fresh garlic, 1 tbsp chopped fresh herbs (such as parsley), a pinch of salt, and 1/4 cup grated Parmesan cheese.
