Take one bread slice and spread a thin layer of mayonnaise on it.
Place 2 slices of mortadella over the mayo.
Add another slice of bread on top and spread mayo on this slice as well.
Layer with one cheese slice and a generous handful of shredded mozzarella.
Using a cup or a round object, gently press down on the top slice to create a dent in the center. This will help hold the egg in place without cutting through the bread.
Place the final slice of bread on top.
Carefully crack an egg into the dent, making sure it stays in place.
Sprinkle salt and chilli flakes over the egg for seasoning.
Add some extra shredded mozzarella around the sides for extra cheesiness.
Preheat your air fryer to 190°C (375°F).
Carefully place the sandwich into the air fryer basket.
Air fry for 12 minutes or until the bread is crispy, the cheese is melted, and the egg is cooked to your desired doneness.
