Ingredients

For the Cajun Chicken:

  • 2 chicken breasts, sliced in half to create four thinner pieces
  • 2 tbsp lemon juice
  • 2 tsp each: salt, black pepper, paprika, garlic powder, Cajun seasoning
  • 2 tbsp olive oil (for cooking)

For the Creamy White Sauce:

  • 2 tbsp butter
  • 3 tbsp flour
  • 500-700 ml milk (adjust based on desired sauce thickness)
  • 1 tsp each: black pepper, chili flakes
  • 1 bowl shredded cheddar cheese
  • ½ tsp chicken powder
  • ½ cup reserved pasta water (for added creaminess)

For the Pasta:

  • 500g pasta of choice (fettuccine, penne, or linguine work best)
  • Parmesan cheese (for garnish)
  • Oregano (for garnish)

Instructions

Step 1: Prepare and Cook the Chicken

  • Marinate the chicken: In a bowl, combine chicken breasts, lemon juice, salt, black pepper, paprika, garlic powder, and Cajun seasoning. Mix well, ensuring the seasoning evenly coats the chicken. Let it marinate for at least 15-20 minutes to enhance the flavors.
  • Cook the chicken: Heat a large skillet over medium-high heat and add olive oil. Once hot, add the marinated chicken.
  • Sear the chicken for about 4-5 minutes per side, or until golden brown and cooked through (internal temperature should reach 75°C or 165°F).
  • Rest the chicken: Remove from heat and let the chicken rest for a few minutes before slicing. This helps retain its juiciness.

Step 2: Cook the Pasta

  • In a large pot, bring water to a boil and add a generous pinch of salt.
  • Add the pasta and cook according to package instructions until al dente.
  • Before draining, reserve ½ cup of the pasta water, which will be used later to adjust the sauce consistency.

Step 3: Prepare the Creamy Cajun Sauce

  • In the same skillet used for the chicken, melt butter over medium heat.
  • Once melted, add flour and whisk continuously for 1-2 minutes until a smooth, golden roux forms.
  • Gradually pour in milk, whisking constantly to prevent lumps from forming. Allow the sauce to simmer and thicken.
  • Stir in black pepper, chili flakes, and chicken powder for depth of flavor.
  • Add shredded cheddar cheese and stir until it melts completely, creating a silky, creamy texture.
  • Slowly pour in the reserved pasta water to achieve the perfect sauce consistency.

Step 4: Combine Everything

  • Add the drained pasta to the skillet and toss it in the sauce until fully coated.
  • Slice the rested Cajun chicken into strips and place it over the pasta.
  • Garnish with freshly grated Parmesan cheese and a sprinkle of oregano for extra flavor.

Tips for the Best Creamy Cajun Chicken Pasta

  • Adjust the spice level: Add extra chili flakes or Cajun seasoning for a spicier kick.
  • Use fresh cheese: Freshly shredded cheese melts better and gives a creamier texture.
  • Don’t overcook the chicken: This keeps it juicy and tender.
