About the Chicken

I used my Crispy Chicken Bites for this recipe and they work beautifully inside the roll. The crispiness softens slightly in the rice paper which actually works really well with the other textures. That recipe is on the blog and worth making if you want the full experience.

Any cooked chicken works here though. Leftover roast chicken, pan fried chicken breast, grilled chicken thighs, rotisserie chicken from the store, or any seasoned cooked chicken you have on hand all work perfectly. Shred or slice it before rolling.

Ingredients

For the Caesar Dressing

  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 4 to 5 tbsp grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tbsp Dijon mustard
  • 2 tsp Worcestershire sauce
  • 1 tbsp fresh lemon juice
  • Salt and pepper to taste

For the Rolls (makes 6)

  • 200g cooked chicken, sliced or shredded
  • 1 head lettuce, shredded
  • 1 bell pepper, thinly sliced
  • 1 cup croutons
  • 1 cup Caesar dressing

Note: You will need 12 rice paper wrappers for 6 rolls as each roll is double wrapped. See the tips section below for why this makes a big difference.

Instructions

1. Make the Caesar Dressing
In a bowl, whisk together the Greek yogurt, mayonnaise, grated Parmesan, garlic powder, Dijon mustard, Worcestershire sauce, lemon juice, salt, and pepper until smooth and creamy. Taste and adjust the seasoning. Set aside. You will need about 1 cup for the rolls and can store any leftover dressing in the fridge for up to 5 days.

2. Prepare the Fillings
Have all your fillings ready before you start rolling. Shred or slice the chicken, shred the lettuce, and slice the bell pepper into thin strips. Lay everything out in front of you so assembly is quick and easy.

3. Soak the Rice Paper
Fill a wide shallow bowl or plate with warm water. Take one rice paper wrapper and submerge it for about 10 to 15 seconds until it is just softened and pliable but not fully limp. You want it slightly firm still as it will continue to soften as you fill and roll it. Lay it flat on a clean damp surface or plate.

4. Fill and Roll
Layer the fillings in the center of the softened rice paper. Start with a base of shredded lettuce, then add the chicken, sliced bell pepper, and croutons. Drizzle a generous amount of Caesar dressing over the filling.

Do not overfill but do be generous. The croutons in particular can be sharp at the edges so keep the filling centered and away from the edges of the wrapper.

To roll, fold the bottom edge of the rice paper up and over the filling. Fold in the two sides and then roll forward firmly, keeping the filling tight as you go. It does not need to be perfect.

5. Double Wrap
Because the filling is generous and the croutons can be sharp enough to puncture a single wrapper, immediately place the finished roll onto a second soaked rice paper wrapper and roll it again the same way. The double wrap keeps everything secure and gives you a sturdier roll that holds together much better when you pick it up and eat it.

Repeat with the remaining wrappers and filling to make 6 rolls in total.

Serve immediately with extra Caesar dressing on the side for dipping.

Work quickly once the rice paper is out of the water. Have all your fillings prepped and ready so you are not searching for things while the wrapper dries out on the board.

Keep the filling centered and compact. A tight, centered filling is much easier to roll than a spread out one and gives you a neater result.

Serve immediately. Rice paper rolls are at their best fresh. The wrappers can dry out and become tough if left to sit for too long.

These rolls are a complete meal on their own. Serve with a small bowl of extra Caesar dressing on the side for dipping. A light salad or some extra sliced vegetables on the side work well if you want to make it more of a spread.

Storage

Rice paper rolls are best eaten immediately after making. If you need to store them briefly, place them on a plate without touching each other and cover with a damp paper towel to prevent the wrappers from drying out. They will keep for a couple of hours at room temperature but are not suitable for storing overnight as the wrappers become tough and the filling softens too much.

Prepare all the fillings and dressing ahead of time and roll fresh when you are ready to eat.
