Ingredients

For the Eggs:

  • 4 eggs
  • Pinch of salt
  • ½ tsp each: pepper, chili flakes, bouillon powder
  • Handful of chopped spring onions
  • 1 tbsp butter

For Layering:

  • 4 slices of bread
  • 2 pieces of lettuce
  • Mortadella or turkey slices
  • Beef salami
  • Cheese slices
  • Sriracha (or your favorite sauce)

 

Instructions

Prepare the Egg Mixture

  • In a bowl, whisk together: eggs, salt, pepper, chili flakes, bouillon powder, and chopped spring onions.

Cook the Eggs & Bread

  • Heat butter in a pan over medium heat.
  • Pour half of the egg mixture into the pan and immediately place two slices of bread on top.
  • When the eggs are partially set, flip the bread slices so they are facing up.
  • Let the eggs cook completely before flipping everything over to cook the other side.

Layer Your Sandwich

  • On one side, add lettuce, sliced chicken (optional), a cheese slice, beef salami, and a drizzle of sriracha.
  • For the second sandwich, layer with lettuce, two turkey slices, a cheese slice, and salami.
