Ingredients
For the Stir Fry
- 2–3 tbsp vegetable oil
- 500g lean ground beef
- 2 small paprikas (or red bell peppers/sweet peppers)
- 2–3 Thai red chillies (add more if you prefer extra heat)
- 5–6 garlic cloves
- 1 tbsp oyster sauce
- 2 tsp fish sauce
- 1 tbsp soy sauce
- 2 tsp dark soy sauce (for color and deep caramel notes)
- 1 tsp sugar
- 1 tsp MSG
- 1 cup Thai basil leaves (Thai holy basil/Kra Pao is ideal, or Thai sweet basil)
For Serving
- 2 large eggs
- Vegetable oil (for frying eggs)
- 2 cups cooked white rice (Jasmine rice works best)
Instructions
1. Brown and Crisp the Beef
Heat 2 to 3 tablespoons of vegetable oil in a large pan or wok over medium-high heat. Add the lean ground beef, breaking it up with a spatula as it cooks.
Continue cooking until all the released liquid completely evaporates and the beef begins to sizzle and brown. You want the edges to get nicely crisp and caramelized—this texture step makes a huge difference in the final dish!
2. Pound the Aromatic Paste
While the beef is cooking, place the chopped paprikas, Thai red chillies, and garlic cloves into a mortar and pestle. Pound together until you get a coarse, fragrant paste.
(If you don’t have a mortar and pestle, you can finely chop them together on a cutting board).
3. Sauté Aromatics & Add Sauces
Push the browned beef to one side of the pan (or mix directly in). Add the pounded garlic, chilli, and paprika paste into the hot oil. Sauté for 2 to 3 minutes until aromatic and raw garlic smells disappear.
Add the oyster sauce, fish sauce, light soy sauce, dark soy sauce, sugar, and MSG directly to the beef. Stir everything together over high heat for 1 to 2 minutes until the beef is evenly coated in the glossy sauce.
4. Toss in the Thai Basil
Turn off the heat (or reduce to very low). Fold in the fresh Thai basil leaves. Stir gently for 30 seconds until the basil wilts slightly from the residual heat and releases its aromatic fragrance. Remove from heat immediately so the basil retains its bright flavor.
5. Fry the Eggs & Serve
In a small pan, heat a generous splash of oil over medium-high heat. Crack the eggs in and fry until the outer edges are puffed, crispy, and golden brown while the yolk remains soft and runny.
Divide the warm cooked white rice into serving bowls, spoon the juicy Pad Kra Pao over top, and crown each bowl with a crispy fried egg.
Crispiness Is Key: Browning the Beef
The secret to a restaurant-quality Pad Kra Pao at home is patience during the initial beef cooking phase. Do not rush to add your sauces while there is still liquid simmering in the pan! Allowing all the moisture to cook off so the ground beef actively fries in its own oils creates irresistible crispy brown bits that anchor the entire dish.
Mortar & Pestle Magic
Pounding the garlic, chillies, and paprika in a mortar and pestle bruised-style ruptures the plant cells much more effectively than slicing with a knife. This releases essential oils, resulting in a far more fragrant and cohesive paste that coats every bite of beef seamlessly.
Tips for Getting It Right
- Don’t Overcook the Basil: Add the Thai basil at the very end after turning off the heat. Overcooking basil turns it bitter and causes it to lose its distinct anise-citrus aroma.
- Control Your Heat Level: 2 to 3 red chillies combined with sweet paprikas give a pleasant, mild kick. If you prefer classic street-food spice, increase to 5 or 6 Thai bird’s eye chillies!
