  • 1 kg beef undercut strips (thinly sliced – ask butcher for pasinday cut, but slightly thicker)

  • 1 cup yogurt

  • ⅓ cup lemon juice

  • 1 tbsp ginger garlic paste

  • ½ tbsp raw papaya paste (for tenderness)

  • 2–3 tsp salt (adjust to taste)

  • 3 tsp black pepper

  • 2 tsp red chilli powder

  • 3 tsp red chilli flakes

  • 2 tsp cumin powder

  • 2 tsp coriander powder

  • 3 tsp garam masala

  • 2 onions, thinly sliced and fried until golden brown

  • ⅓ cup gram flour + 1 tsp poppy seeds (toasted together)

  • 4 tbsp mustard oil (for marination)

  • 2 tbsp mustard oil (for cooking)

For the Garlic Yogurt Sauce

  • 1 cup strained yogurt (or thick Greek yogurt)

  • 2 tbsp mayonnaise

  • 1 tbsp lemon juice

  • 1 garlic clove, crushed

  • 1 tbsp olive oil

  • Salt & pepper to taste

For the Onion Salad

  • 1 onion, thinly sliced

  • 1 tomato, thinly sliced

  • Chopped fresh coriander

  • Juice of 1 lemon

  • Pinch of sumac

For Assembling

  • Tortilla wraps or lavash bread

Instructions

Step 1: Marinate the Beef

  • In a large bowl, combine yogurt, lemon juice, ginger garlic paste, papaya paste, salt, black pepper, red chilli powder, chilli flakes, cumin, coriander, and garam masala.

  • Add the fried onions and toasted gram flour + poppy seed mixture.

  • Mix everything well, then stir in the mustard oil.

  • Add the beef strips, coat thoroughly, cover, and marinate for at least 2–3 hours or ideally overnight in the fridge.

Step 2: Cook the Beef

  • In a large heavy-bottomed pan or skillet, heat 2 tbsp mustard oil.

  • Add the marinated beef strips and sear on both sides until golden brown.

  • Pour in the remaining marinade and 1 cup of water.

  • Cover and let it simmer on low heat for 1 hour, or until the beef is fork-tender and nearly falling apart.

  • Once done, increase the heat and cook until the mixture thickens into a sticky gravy.

  • Shred the beef coarsely and keep some larger pieces intact for texture.
